Soul Food Series #1: Pork Meatball Congee

In many parts of Asia, rice porridge often known as congee, is more than just food. It is comfort in a bowl. When someone is feeling weak, unwell, or simply in need of warmth, this humble dish is usually the first thing offered. In Thailand, rice porridge is a familiar savory breakfast, gently warming the body at the start of the day. In the Philippines, it often appears as a light afternoon snack or merienda, shared with family and friends. Across cultures, it carries the same message: care, nourishment, and love.
When my husband had tooth surgery and needed to stick to soft foods, I went searching for a gentle yet nourishing recipe. Thankfully, I came across one from Delightful Plate that hit all the right notes.
